- 2 avocados
- 4 large eggs
- 1 cup cherry tomatoes (halved)
- 1/2 cup fresh basil leaves (torn)
- 1 lime (zest and juice)
- 4 tablespoons extra-virgin olive oil (divided)
- 3-4 tablespoons water
- Kosher salt and freshly ground black pepper (to taste)
- Halve each avocado lengthwise. Peel and pit the halves. Lay the avocados on a clean work surface, hollow-side-up.
