The Granton Edge is a 7-inch long Santoku knife by Mercer Culinary. It stays true to the original design of the Japanese Santoku bocho. Both the handle and the blade of the Granton Edge work in harmony. There is a balance between the weight of the handle and blade and tang and the width and weight of the blade. This makes the Granton Edge a great multi-use kitchen knife.

Mercer Culinary utilized only X30 Cr13 high-carbon, no-stain, Japanese steel for its blade. It is a single piece of metal that runs from the tip of the blade all the way to the tang’s edge. The sheepsfoot design of the blade allows for easier slicing and cutting maneuvers. Its razor-sharp edge makes sure that you will process your food with relative ease.

Unfortunately, this is a blade that will require occasional sharpening. You can use either a sharpening rod or a whetstone to keep the edge as razor-sharp as possible. It is still a lot easier to maintain than so-called self-sharpening knives on the market.

The grooves on the blade allow for effortless slicing and chopping. Food will never stick onto the surface of the blade. You will not have issues with staining, too. Mercer Culinary designed the Granton Edge to be free from stains.

The handle features a combination of polypropylene and Santoprene materials. The former gives the knife durability and strength. The Santoprene, on the other hand, provides for a more comfortable grip. There are also textured finger points. They offer grip and slip resistance as you use the knife. They also ensure better protection, plus they work well with the integrated finger guard.

The only downside is that it is not dishwasher-safe. Keep this in mind and you can be sure the Mercer Culinary Edge Santoku Knife will stay with you for many years.
