How to Make Rock Candy
Rock candies are the best kind of candies that you can either use to decorate and make your desserts taste better or just eat it alone when you’re craving flavored candies. What’s more interesting is that they are very easy to make at home and doesn’t require you to be an expert to make the perfect rock candies you have ever tasted! Not to mention, you also get to add your own favorite flavor and coloring.
- Granulated white sugar ( 4 cups/ 946 g)
- Water ( 2 cups/ 473 ml)
- Food Coloring (Optional)
- Flavoring (Optional)
The rock candy recipe is very easy to follow as long as you get the method of cooking the sugar solution right. If you are planning on making the sugar solution on stove, fill up a pot with 2 cups of water and wait till it starts to boil.
For making the solution in a microwave, you will need a ‘microwave-safe glass’ to boil the water. However, you will have to mix up the water and sugar before putting the bowl inside the microwave for two minutes at a high setting. After this, you have to stir the mixture for more two minutes to ensure that the sugar has completely melted into the water.
Be extremely cautious while handling the boiling solution to prevent yourself from any serious burns or other injuries.
For the second step, take 4 cups of sugar and slowly pour it into the pot using a spoon. Use a spatula to ensure that the sugar dissolves properly into the boiling water. This step may take a while as the water gets more saturated, the harder it becomes to dissolve more sugar into it. You can try turning up the heat a little higher to mix it up evenly until you see clear water.
When all the sugar has dissolved into the boiling water, turn off the stove and set it aside for 15-20 minutes to cool it down. At this point, you will have to check again for any undissolved sugar because the liquid sugar will start crystallizing around it instead of the stick or string that you want to use. So, if you can still see undissolved sugar, pour the solution into a bowl or pot through a strainer to get rid of it.
The fourth step is completely optional, as it depends on what you want your rock candy to taste like. You can add food flavoring and coloring to the solution to give it a better taste.
For instance, if you want to use red food color, you can pour in a few drops of strawberry flavoring into the solution. Make sure to stir it well so that the food coloring or flavoring has mixed evenly.
If you want to be more creative and create different flavors, you can add food extracts like vanilla, peppermint, strawberry and a lot more other flavors to enhance the taste. Otherwise, you can also add different fruit juice to give it a fruity and tangy taste. Lime or orange can be a good pair for introducing a tangy flavor to your homemade rock candy.
For the final step, you will have to carefully pour in the solution into a glass container so that you can create your own rock candy. If you want to make several of them, pour in the solution in separate glass jars to make the process faster.
Clean the jars beforehand to get rid of any dust and impurities to prevent the sugar crystals from clinging on to them. Place a lid or parchment paper to avert dust particles from settling inside the glass jar.
How to Make a Rock Candy Fast
- Using A Stick
For starters, take the Popsicle stick or a skewer and dip it into a glass of water. Once it’s wet, roll it over granulated sugar generously. This should give you an easy start and speed up the process of crystallization. However, make sure to dry up the stick before you move on to the next step.
After the stick has completely dried off, place it carefully inside the jar without touching the sides of the container. This may disrupt the crystallization as sugar particles will fall off from the stick. Hence, be extra careful while working on this step. Keep about an inch between the end of the stick and the glass jar so that the crystals have enough space to grow. Use a clothespin to cling on to the stick and place it across the opening of the jar. Make sure to place it properly so that it doesn’t fall off into the jar.
Once you have settled everything according to their right position, cover the jar with a few layers of paper towel to avoid contamination. Keep the jar in a safe place and wait for a about a week or more for the crystals to form.
Take out the stick once you can see bigger crystals around it and put it on a wax paper to dry off.
How to Make Rock Candy Sheets
Follow all the steps of making the sugar solution, only this time, use a candy thermometer to check the temperature. When the thermometer reads 285 Fahrenheit, turn off the stove and wait for a couple of minutes before adding all the flavoring and coloring. Stir it well for an even distribution.
For making candy sheets, you will need a pan large enough to make a thin sheet of rock candy. Take a pan and cover it with a baking sheet. Spray non-stick cooking spray on it and then pour in the solution of your rock candy. Set it aside in room temperature for a couple of minutes so that it hardens up.
Once it’s all hard and rocky, you can break it up and use it any way you want to!
